The consumer Bradley Smoker is based on the commercial smoker that Bradley Technologies has been manufacturing since 1992. The commercial smoker won a Chefs in America award in 1994.
The Bradley Smoker is designed to be a unique smoke house, sold complete with its accompanying smoke generator. Flavor bisquettes are burned in the unit for 20 minutes each, so cook temperature does not fluctuate. this is designed to eliminate high temperature gases, acids, and resins that can distort smoked food flavor.
An independently controlled internal heating element gives the unit smoking versatility. It may be used to hot smoke, or it may be used as a slow cooker or slow roasting oven. The low temperature cooking environment is designed for smoking, while an infrared heat source makes the unit suited for drying fruits.
The original smoker form the company, Model BT1S1, weighs 40 pounds. The unit is 2.6 feet H x 2 feet W x 1.23 feet D.
The exterior of the smoker is steel coated with an epoxy powder paint. The aluminum interior has a cooking volume of 2,288 cubic inches. It has four adjustable racks.
The unit contains a 500-watt heating element for cooking and a 125-watt heating element for smoking. It operates using 110 V power, with a 240 volt model also available. Maximum temperature is controllable up to 160 degrees C/320 degrees F.
